The Decaf Guatemalan is our most popular decaf which can be roasted both light and dark. The Decaf Ethiopian is a very rich and full coffee that I generally roast light. When roasted dark makes a good cappuccino. The Decaf Kenyan is generally roasted a little lighter and is a very smooth and refined cup.

The quintessential Costa Rican coffee is known throughout the world as a perfect triangular balance of body, flavor and acidity.
Dota is a micro region in Tarrazu with a very unique soil and climate. This coffee is highly dependant on the roast. A lighter roast will bring out a milk chocolate brightness with some berry overtones while a darker roast tends to accentuate a bittersweet chocolate with a slight whiney finish. The depth of this cup tends to increase as the coffee cools.

Ethiopian Harrar is a parent to the modern day coffee world. With old world roots this bean is still dry processed. The Harer region is known for producing a distinctive coffee that has a chocolate taste with fruity aromas. This Harrar is very clean, less acidic, has a fuller body, and a dark chocolate bottom. This coffee is similar to our Costa Rican in that it is highly dependant on the roast. A lighter roast will bring out the fruitier characteristics. A full city roast will get you a good mix of fruity and earthy tones. Coffee will develop a little more character if allowed to set up for an extra day .

One of my favorite coffees! A very floral aroma marks an excellent Yirgacheffe. Medium-bodied coffee supports sweet spicy lower notes, with high delicate jasmine flavors on top. A seductive coffee that lures you back, again and again. Medium roast brings out the subtle nuances. Excellent for blending.

This is the richest Sumatra coffee I have found in years. Full bodied, with a rich dark chocolate bottom. This coffee has low acidity and a pleasant smokey finish. It is very clean tasting for such a rich Sumatran. I would roast this coffee a little darker, full city plus. It may roast a little uneven.

Outstanding example of a Sumatra coffee. It is full and rich with low acidity, deep rich bottom with a subtle sweetness on top. Picked from a region of 1500 very small farms each with 1 to 2 acres. I roast it a little darker, roast tends to look a little uneven.

Indian Monsooned Malabar |

The Indian Monsooned Malabar is one of India's most distinctive coffees. The bean itself is a swollen bean with a golden color which is due to its unique curing process. This process originally comes from the long sea voyage that the coffee used to take. Now it is duplicated in special warehouses during the monsoon season.Excellent for expresso or as part of a blend. We generally roast this to full city + and let it set up for a couple of days.

Mysore coffees are the best known and the most popular of all Indian coffees, they posses good body and snappy acidity. The overall taste profile is very unique, with spicy overtones. These spicy overtones come from the cinnamon, cardamom, nutmeg, cloves and pepper that grow alongside the coffee trees. This lot is full bodied, with a rich full taste and moderate acidity. Very interesting and exotic, I like to roast this coffee a little darker, but not too dark.

Kenya is known at the star of
the African Coffees. Noted
for its citrus overtones, and rich flavor. This one
produces Blackberry-like
sparkle in a medium weight cup accented with an amazingly
smooth finish.
This lot could be the best Lighter
bodied Kenyan, we have had in a long time! Medium
roast produces the most flavorful cup from citrus
to Merlot like. A darker roast provides a fuller,
smoother cup.

Kenya AA Peaberry |

Kenya is known as the star of the African Coffees, some even think it is one of the best coffees in the world. Grown at 4,500 feet to 6,400 feet. Peaberries are prized for their richer, more intense flavor, the annual crop only produces a small number of peaberry bags. This Kenyan is a very rich balanced coffee that has an orange citrus sparkle with a medium to full body, also a few milk chocolate undertones. This coffee seems best at a medium roast; I shoot for right before the second crack. A medium roast brings out the citrus, a dark roast gets you some chocolate over tones and a fuller body.

excellent choice for you dark roast fans. Create a
great espresso blend by blending about 30% Malinal
peaberrys with our Brazil.
Peaberries are prized for their richer,
more intense flavor, the annual crop only produces
a small number of peaberry bags and we were happy
to get these. The Malinal estates, take great care
to produce an excellent coffee, while using safe,
sustainable shade techniques and providing a fair
wage to the workers.

coffees. We discount this coffee as our way to help

D.

An excellent balanced coffee, the lot was harvested
at the perfect time and is a great find.
It has good body, with a smooth finish, with interesting
fruity overtones coupled with hints of cocoa, caramel,
spices.
It can be roasted both light and dark, and creates
an interesting coffee by blending the two different
roasts.

Tanzanian Top Kilamanjaro Peaberry |

Usually, the coffee cherry produces two half-beans, when one dominant bean takes over, both halves grow together inside the coffee cherry producing one round intact bean called a peaberry. Peaberries are prized for their richer more intense flavor. Approximately one bean in every 12 cherries is a peaberry. A rich full, coffee with a subtle dark chocolate flavor, excellent for blending with the more acidic coffees. I like to roast it a little darker.

Timor-Leste Organic Fair-Trade Peaberry |

This fair-trade organic Timor-Leste peaberry is a large jade colored coffee bean. This coffee is fairly bright similar to a Kenyan, It has some very fruity overtones and a moderate body. It has a complexity of light and dark notes that really bring this cup together, I recommend roasting this coffee a little darker, a full city plus. Timor-Leste is a new name for a country that used to be called East Timor, recently they have gained their freedom from Indonesia (who invaded them is the 70's). Before the 70's Timor was said to have some of the best coffee in the world until their economic decline in 75' . Similar to Rwanda, Co-ops have gone into Timor and jumpstarted their economy with the production of coffee. You are now able to help support their troubled times and drink a darn nice cup of coffee while doing so.

Yemen Mocha Sanani |

Yemen is an Asian country that borders the Eastern
coast of the Red Sea, a
stones throw from Ethiopia. This particular Mocca
hails from around the
Capitol city of San'ai, a region which yields bright,
fruity coffees that
are cleaner and smoother than those from the surrounding
areas.
What really sets this coffee apart from the other
Moccas we cupped,
was the pronounced florality, ripe banana and blackberry
aromas, that emerged from the cup in a city--full-city
roast. It offers good body, with a lovely, creamy
texture, and nice round, balanced acidity.
A darker roast will add a bit more body, and a very
sweet pungency, which will emphasize the incredible
earthiness of the coffee, but you will reduce the
floral-fruit flavors. Roast anywhere from City to
Full-City++.

What does bird friendly mean? Bird friendly means the coffee is certified organic and shade grown. Shade grown is coffee grown under the canopy in the Latin America forests. This is better for the forests because they do not need to be clear-cut to support the farmers. It leaves the habitat for the birds and other wildlife intact.
This Peru has moderate acidity, a medium to light body and interesting fruity overtones.
This coffee is best roasted to a full city but be careful decafs tend to roast up a little quicker.
