Here's how we have been roasting with a Whirley Pop:
Step 1: Weight out approx. 1 pound of green coffee and dump it into the pot.
Step 2: Place the pot on your burner, we suggest starting on medium/high heat. No need to pre-heat.
Step 3: Stir, stir, and stir some more (you need to stir consistently throughout the roast but its not a race), the unit will roast quicker if you leave the top closed (and smoke slightly less). If the turning mechanism jams, do not force it, simply turn it the other way for a few rotations. Peek in the pot every 4-5 minutes to evaluate your roast.
Step 4: Reduce or increase the heat according to what kind of roast your looking for, if the beans start to burn decrease the heat, usually to around a medium temp.
Step 5: You will be able to hear the first crack and should be able to identify the second crack by the amount of smoke (it will smoke most of the roasting process but will greatly increase when getting close to the second crack) or by peeking into the pot to check for oily surfaces.
You will also notice the smoke will start as a little grassy smelling before the first crack and turn more pungent and acidic towards the second crack.
Step 6: You will need to cool the coffee when you hit your desired roast, we dumped the coffee onto a cookie sheet (single layer on beans) and took it outside, cool times seem to be around 4-5 minutes. This is also a good time to blow off the chaff, either breath powered or by fan :-).
Step 7: Enjoy!
These instructions are an outline of what we suggest, there are many different philosophies to roasting in a Whirley Pop.
